Amazing Tomato Soup


The world is a better place because of homemade tomato soup.

Wouldn't you say so?

None of that silly soup-in-a-can nonsense; these are just pure, unadulterated tomatoes in soup form. Obviously there are some extra ingredients thrown in for flavor and texture sake, but it is so easy and tasty that you will never again want to stick your face into a bowl of tomato soup from a can. Unless, of course, you are completely unaroused by the idea of homemade tomato soup and could care less about how it appeared in your bowl. In that case, feel free to continue as you were.

Amazing Tomato Soup 

Recipe adapted from Tasty Kitchen Member, manda2177

2 tbsp. olive oil
1 tbsp. butter (NOT margarine)
1 whole medium onion, chopped
2 cloves garlic, chopped
2 cans diced tomatoes
1 tbsp. brown sugar
3 slices sandwich bread
2 cups chicken stock (optional)
1 tbsp. heavy cream  (optional, depending on desired consistency)
salt and pepper, to taste 

Chop the onion and garlic.
Cut up 3 slices of bread into 1-inch cubes.
Heat 2 tablespoon of oil and butter in large pot or Dutch oven over medium-high heat.
Add the onion and garlic.
Cook, stirring frequently, until the onion is translucent, about 3-5 minutes. Stir in the tomatoes. Add in the sugar and bread; bring the soup to a boil.
Reduce the heat to medium and cook, stirring occasionally, until the bread is completely saturated and starts to break down, about 5 minutes.
Transfer the soup to a blender.
Process until the mixture is smooth and creamy, about 2-3 minutes. 
(Be careful when blending a HOT mixture!)
Season to taste with salt and pepper. 
If you wish, add in the chicken stock or double cream to change the final consistency. 
Serve with homemade bread or grilled cheese sandwiches and enjoy!
